For those of you who love the warm sweetness that a winter squash brings to the table during the colder months of the year, this snack is for you! Next time you bake a squash (butternut, spaghetti, acorn, or pumpkin), don't throw away those seeds. They are a delicious and healthful snack for you - and super EASY to make. Just toss the seeds with a bit of olive oil, salt, and pepper, throw them in the oven at 400 for 15 minutes, and they're done! The saltiness is a nice contrast to the sweetness of the squash. And as the squash takes quite a bit longer to cook, these seeds will help tide you over until the main course!
